Chop 1/2 small onion, 1/4 zucchini, and 4-5 mushrooms and saute in olive oil. Wisk 3 eggs in a small bowl with 1/2 cup milk. Pour into skillet with vegetables and cook at medium heat for approximately 3-4 minutes. Next, grate the Monterey Jack cheese on top of the eggs and let it melt. When cooked thoroughly, fold over and slide out onto plate and top with salsa.
